St. Patrick's Day food has been the same at my house for ages. The day would start with Lucky Charms that were left for the kids by the leprechauns (I was notorious for not alllowing sugary cereal in the house, so it had to be leprehauns, right?) Dinner would be corned beef and cabbage, boiled with potatoes, carrots, and onions; and accompanied by Irish Soda Bread from our local bakery, Rolling Pin.
About 15 years ago, Rolling Pin was bought out by the local supermarket, Donelan's - but Donelan's kept baking all the Rolling Pin recipes, including the soda bread. BUT - several years ago Donelan's sold out to another grocery chain...and the Rolling Pin recipes disappeared. The soda bread was replaced by some mass market variety baked who knows where.

Add a splash of Guinness to your corned beef and cabbage cooking liquid for extra flavor. |
Guiness Chocolate Pudding |
Makes 4 individual puddings. Ingredients:
Instructions: Butter four small ovenproof ramekins and set aside. Place the butter, chocolate and a generous pinch of salt into a heatproof bowl. Set over a small pan of just-simmering water and stir until melted, then remove from the heat and set aside. Beat the sugar and eggs with an electric whisk until pale, almost doubled in volume and thick enough to leave a trail when the beaters are lifted up. Gently fold in the melted chocolate and the Guinness. Spoon the mixture into the ramekins, then chill in the fridge for 1 hr. Heat oven to 400 degrees and put a baking tray on the top shelf to heat up. Place the ramekins on the hot baking tray and bake for 18 mins. Remove from the oven and leave to stand for a minute, then serve with a dollop of cream, if you like. |
